How to Butcher a Bluefish

Our first foray into the world of video blogging! Here in episode 1, Chef Tony Maws demonstrates how to fillet a bluefish. This same technique can be adapted to other types of fish as well.

Chef, what do you think about starting the "front" cut from the belly versus from the shoulder of the fish? Do you have a strong preference, or maybe either for different types of fish?

Love these videos! They are very informative and entertaining. I just butchered my first blue this afternoon, and it wasn't as pretty as yours. I will keep trying.
